The Mimbo Spritz combines 120ml of chilled fresh palm wine—locally known as palmy—with 15ml of fresh lime juice and 60ml of club soda or sparkling water, served over ice in a highball or wine glass. Bartenders emphasise that only sweet, unfermented palm wine should be used to maintain the cocktail’s delicate balance; overly fermented or sour palm wine can overpower the drink’s intended flavour. The citrus from the lime cuts through the natural yeastiness of the palm wine, while the soda delivers a clean fizz that enhances its crispness.
According to bar managers in Lagos, the cocktail has been well received at recent private parties and corporate events, especially when paired with spicy Nigerian dishes. “People want something light and refreshing that still honours our local flavours,” one bartender said during a demonstration.
